English<>Spanish Glossary of Cooking Terms
1 Cooking utensils terms
This is not a glossary, but an example of an entry for a glossary of cooking utensils that my students at UPR RP are required to prepare as part of their coursework. The purpose of the glossary, when published in Moodle, will be to serve as a trustworthy source of cooking term equivalents in Spanish and English to be used in translation assignments.
- mandoline (or mandolin)

- A kitchen utensil consisting of a flat frame with adjustable blades, for slicing vegetables.

A mandoline is used by running a piece of food (with some protection for fingers) along an adjustable inclined plane into one or more blades. On some models vertical blades cut to produce julienne, or a wavy blade is used that produces crinkle cuts. In these models a quarter turn to the food between passes produces dice and waffle cuts.
